Atlast, nagkaroon din ng sipag na gumawa ng BIKO! yay!:D
I miss this one po. i'm craving to eat kaya lang tinatamad akong magluto kahit i have all the ingredients kasi po, WALANG IBANG KAKAIN!:scratch:
kasalukuyan po syang nasa oven
I'm experimenting the other way of cooking nakita ko lang din po sa internet..hehe
haaayyyy sana may kasama akong kakain. 3 araw ko rin tong breakfast at merienda..:bonk:
meron bang malapit sa akin dito na maging partner ko sa kainan? whehehe:p

dear mommy, ako pede mong maging partner sa kainan. kaya lang ang layo ko sayo eh, shizuoka pa ako, pero minsan minsan punta naman ako ng tokyo. bigay mo sa akin contact number mo para pag dyan ako raid ko kitchen at laman ng ref mo..hehe

Please share your oven recipe of biko din. May Filipino cooking class ako in two-weeks time. Parang good idea ang biko ;)

I cook biko, my own style but never use oven...wow!:) thats new..!
me, isinasaing ko lang yung malagkit bago ko ilalagay sa kawali na kumukulo yung gata na may brown sugar and vanilla syrup...simple...
please share po naman the oven style....mas madali yata yan....:D thank you...

Wow!! Biko in the oven.. mukhang ibang style yan ah.. Share mo naman. Specialty ko ang biko but the traditional way. Tyak maraming waiting sa Biko in the oven.. :D

BIKO
2 cups malagkit (sticky rice)
3/4 cup sugar
3 1/2 cups diluted coconut milk
1/8 lb butter
1 egg, beaten
Gate and squeeze out milk from 2 coconuts, save 3/4 cup of the first milk squeezed out ( this is called Kakang gata ... will be used for topping). Dilute the rest of the coconut milk to make 3 1/2 cups. Boil the rice and coconut milk in a heavy pot stirring constantly to keep from burning. When the rice is done and almost dry, lower the heat and add the sugar and butter. Mix well and set aside. When cool, add the egg.
Spread the mixture in a well buttered pyrex dish (7 1/2x11 3/4x1 3/4") and bake in preheated 300°F oven for 20 minutes.
Prepare topping
1 can condensed milk
3/4 cup rich coconut milk
2-3 Tbsps flour
Combine all the topping ingredients in a heavy saucepan and cook over low heat stirring constantly until thick (about 15 minutes). Pour over rice mixture in dish. Increase the oven temperature to 350°F. Bake until top is brown (about 15 minutes).
I can't trace the website where I got it, pero my Tita cooks it this way too. You can use dahon ng saging as lining sa pan, habang bine-bake, para may added flavor!
Will be using this recipe to give a cooking class next month to Japanese moms and kids at my son's school. Alam na kasi nila ang turon at banana cue, kaya iba naman!

Grate the coconut.
Or just use canned coconut milk, di ba?
I read from a recipe book: if you really don't have access to coconut milk: make a 1:1 mixture of milk and vegetable oil. Tried it to cook Chicken Pininyahan dati. Worked well naman, without the coconut aroma nga lang.
Pero syempre, Pinoys tayo kaya coconut milk pa rin ang the best!

may nakikita akong niyog na buo pa sa supermarket here, but wondering papaano kayang ku-kudkurin yon eh walang kudkuran.:(

ohayou gozaimasu! hello po sa inyong lahat. I'm so happy at mukhang makakatagpo din ako ng magiging kaberks ko sa kainan dito..:D
anyways, i'm not an expert po sa kitchen but i used to cook every birthdays of kids. dati po kasi ay nagpa party ako sa bahay.
balik po tayo sa biko.:) here's what i did yesterday and my youngest really loves it.:eek: parang dorobo na pabalik balik sa kitchen to eat. siguro alam nya na if he'll ask me i would never let him eat more dahil maghahapunan na po non:p
ingredients:
3 rice cooker cups malagkit
2 rice cooker cups water
1 can coconut milk
1 and a half cup of brown sugar (you can adjust it according to your taste while making the latik)
1 can young coconut ( leftover po from the previous party so nilagay ko na lang po,cut it into strips.
(I was interested to add butter and egg coz it sounds yummy pero ini eliminate ko na po coz my youngest is into a diet and he cannot eat dairy products. pero try nyo na rin po I'm sure it will taste good!)
procedures:
1)wash the malagkit properly until hanggang wala na po yung whitish color ng water
2) preheat the oven to 190℃ ( i did mine at 180℃ kaya ata walang masyadong tutong:( )
3)cook the malagkit, like how you cook your "shiroigohan" using the rice cooker. kaya lang po add just 2 rice cooker cups of water para medyo matigas .other use the term "half-cook" pag naluto na po ang rice, kunin nyo na kaagad o kaya i unplug nyo na at ang sa akin kahapon ay para namang di half-cooked.
4)In a pan, (medyo malalim) heat the coconut milk and when it slighty boils, add the brown sugar( this time pwede nyo i adjust yung sugar according to your taste.much better kung parang mas matamis kesa panlasa nyo, thinking you'll gonna add the rice after then.)
5) I added my special ingredients which is the young coconut strips.when the latik is much thicker,(careful not to overcook the latik) i added in the rice.
6)mix the malagkit with the sauce(latik) carefully.mga 7-10 mins.kung fully covered na po yung malagkit sa sauce nya, then you can transfer it to a baking dish.
Dahil sa katamaran ng konti, i used t-fal pan kaya sonomama na pong nilagay ko sa preheated oven ang pan, not using a baking dish. i baked it for 5 mins...and then presto! masarap naman po:D
